We have experience of installing MSCRM on Small Business Server 2003 / 2008, and Windows Server 2003 / 2008, and on virtual servers.

We recommend installing MSCRM on a CRM server, and the SQL Server on a separate server for performance reasons. Depending on the size of your business, you may want to split a few more server roles, e.g. have reporting services on a separate server.
